  • 2 cups whole wheat flour
  • Salt, to taste
  • Water, as required
  • 1 cup grated paneer (Indian cottage cheese)
  • 1/2 cup finely chopped onions
  • 1/4 cup finely chopped coriander leaves
  • 1 tsp finely chopped green chillies
  • 1/2 tsp garam masala powder
  • Oil or ghee, as required for cooking

Instructions:

  1. Mix whole wheat flour and salt in a bowl. Gradually add water to make a smooth dough.
  2. In another bowl, mix grated paneer, onions, coriander, green chillies, garam masala and salt to make filling.
  3. Roll small dough portions into circles. Add filling in the center.
  4. Seal edges by pressing lightly. Flatten dough ball and dust with flour.
  5. Roll gently into 6-7 inch circle.
  6. Heat a flat pan on medium flame. Cook paratha until bubbles appear.
  7. Flip and apply oil/ghee. Cook until golden brown spots appear.
  8. Repeat for remaining dough balls.
  9. Serve hot with a side of yogurt, pickle or chutney.

  • 1 cup urad dal (split black gram)
  • 2 cups idli rice

  1. Rinse and soak urad dal, idli rice, and fenugreek seeds separately in water for 4-6 hours or overnight.
  2. Drain and grind urad dal in a wet grinder or mixer to make a smooth batter. Transfer to a bowl.\
  3. Grind rice to make a fine batter, add to urad dal batter, and mix well. Add salt and mix again.
  4. Cover and keep the batter aside to ferment for 6-8 hours.
  5. Grease idli molds, pour the batter, and steam for 10-15 mins.
  6. Check if cooked, remove from molds, and serve hot with chutney and sambar.

  1. In a mixing bowl, add maida, salt, sugar, and baking powder. Mix well.
  2. Gradually add water to the mixture and knead to make a smooth and soft dough.
  3. Cover the dough and keep it aside for 30 minutes to rest.
  4. Preheat the oven to 180°C (356°F).
  5. Divide the dough into small portions and roll each portion into a thin circle.
  6. Place the rolled out circles on a baking tray lined with parchment paper.
  7. Bake the circles in the preheated oven for 10-12 minutes or until they turn slightly golden brown in color.
  8. Once done, remove the maida rolls from the oven and serve hot with any dip or sauce of your choice.

Instructions:

  1. Drain soaked moong dal and blend with water to make a smooth batter.
  2. Mix in onion, green chili, ginger, cumin seeds, and salt.
  3. Adjust batter consistency with water as needed.
  4. Heat non-stick tawa, grease with oil and pour batter to make a thin crepe.
  5. Drizzle oil on edges, cook until golden brown.
  6. Flip cheela and cook briefly on other side.
  7. Repeat with remaining batter.
  8. Serve hot with chutney or sauce.

  5. Grease the tawa with oil or ghee and pour a ladleful of batter on the tawa.
  6. Spread the batter in a circular motion to make a thin dosa.
  7. Drizzle a few drops of oil or ghee on the edges of the dosa and cook until the edges turn slightly golden brown in color.
  8. Flip the dosa and cook for a few seconds on the other side.
  9. Transfer the dosa to a plate and repeat the same process with the remaining batter.

  • 1/4 tsp ajwain (carom seeds)
  • 1/4 tsp turmeric powder
  • 1/2 tsp red chili powder
  • Salt to taste
  • Water as required
  • Oil or ghee for cooking

Instructions:

  1. Add besan, chopped palak, chopped onion, chopped tomato, ajwain, turmeric powder, red chili powder, and salt to taste in a bowl and Mix well with water.
  2. Heat a non-stick tawa on medium flame.
  3. Grease the tawa with oil or ghee and pour a ladleful of the batter on the tawa.
  4. Spread the runny concestancy batter in a circular motion to make a thin chile.
  5. Drizzle a few drops of oil or ghee on the edges of the crepe and cook until the edges turn slightly golden brown in color.
  6. Flip the chilla and cook for a few seconds on the other side.
  7. Transfer the chilla to a serving plate and repeat the same process with the remaining batter.

8. Wheat Flour Pancakes:

Ingredients:

  • 1 cup wheat flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk

  1. Mix wheat flour, baking powder, and salt in a bowl.
  2. Gradually add milk and whisk until smooth.
  3. Heat a non-stick pan on medium flame and grease it with a little oil.
  4. Pour a ladleful of the batter onto the pan and spread it in a circular motion to make a thin pancake.
  5. Cook until bubbles appear on the surface of the pancake, then flip and cook for a few seconds on the other side.
  6. Repeat with the remaining batter.

  • 2-3 mushrooms, sliced
  • 1 cup water
  • Salt, to taste
  • 1/2 tablespoon lemon juice
  • Coriander leaves, for garnish

Instructions:

  1. Heat oil in a pan on medium flame. Add cumin seeds and let them crackle.
  2. Add chopped onions, green chili, and ginger. Saute for a minute or until onions turn translucent.
  3. Add sliced mushrooms and saute for 2-3 minutes or until they are cooked.
  4. Add sooji and roast for 2-3 minutes or until it turns slightly brown and aromatic.
  5. Add water and salt. Mix well and cook for 2-3 minutes or until the water is absorbed and sooji is cooked.
  6. Add lemon juice and mix well.
  7. Garnish with coriander leaves and serve warm.

  3. Cover bowl with plastic wrap and refrigerate for at least 15 mins to allow flavours to meld together.
  4. Preheat your grill to medium-high heat when you’re ready to cook kebabs. If you don’t have a grill, you can also use a kadhai with salt on your stove.
  5. Divide mixture into 6-8 equal portions and shape each portion into a long, thin sausage shape.
  6. Grill kebabs for 8-10 minutes, turning occasionally, until they are cooked through and nicely charred on the outside.
  7. Serve kebabs hot with salad, and some fresh herbs for garnish.

8. Paneer Rolls

Instructions:

  1.  Heat oil to medium heat in pan.
  2. Add the chopped veggies and cook for 2-3 minutes, until they are slightly soft.
  3. Add the cooked chicken or paneer to the pan and cook for another 2-3 minutes.
  4. Add salt, red chili powder, cumin powder, coriander powder, and garam masala powder to the pan and mix well.
  5. Squeeze the lemon juice over the mixture and stir.
  6. Heat the rotis on a tawa or in a microwave until they are slightly warm and pliable.
  7. Place a spoonful of the vegetable and chicken/paneer mixture in the center of each roti.
  8. Roll the rotis tightly around the filling, tucking in the sides before eating.

These are super convenient as you can carry them in your tiffin also.
